You can opt to swap recipes and cook each other’s dishes as a way to socially distance the pleasures of the potluck. These recipes will definitely wow your guests this year!

1. Instant Pot New York Cheesecake

Ingredients

For the crust:

  • Graham crackers, ground – 10
  • Butter, melted – 4 tablespoons
  • Brown sugar – 2 teaspoons
  • A pinch of salt

 

For the cheesecake:

  • *Cream cheese – 16 ounces
  • *Sour cream – ½ cup
  • *Eggs – 2
  • White sugar – ⅔ cup
  • Cornstarch – 2 tablespoons
  • Vanilla extract – 2 teaspoons
  • A pinch of salt

 

*Make sure these ingredients are at room temperature.

Recipe

For the crust:

  1. Ground your graham crackers.
  2. In a bowl, mix your ground graham crackers, brown sugar, melted butter, and salt.
  3. In a cheesecake pan, pour in your crust mixture.
  4. Place this pan in the freezer.

 

For the cheesecake:

  1. In bowl one, mix your cornstarch, white sugar, and salt.
  2. In bowl two, mix your cream cheese.
  3. Pour in your ingredients from bowl one into bowl two. Stir everything together.
  4. Add and mix your vanilla extract, sour cream, and two eggs into bowl two.
  5. Take your cheesecake pan out of the freezer, pour in your batter, and smooth it out.
  6. Pour in one cup of water into your Instant Pot.
  7. Place a steamer rack and then your cheesecake pan in your Instant Pot.
  8. Close the Instant Pot’s lid. 
  9. Cook for 26 minutes on high pressure, naturally release pressure.
  10. Remove your cheesecake pan.
  11. Let the pan cool for 10-15 minutes.
  12. Carefully remove the cheesecake from its pan.
  13. Serve after the cheesecake cools for 4-8 hours.

2. Instant Pot Buffalo Wings

Another popular party food is the buffalo wing. But you don’t have to order these snacks from a sports bar. Instead, follow this recipe and make buffalo wings in an Instant Pot.

Ingredients

  • Chicken wings – 3 pounds
  • Hot sauce – 1 cup
  • Water – 1 cup
  • Butter, melted – 2 tablespoons
  • Honey – 1 tablespoon
  • Seasoned salt – ½ tablespoon
  • Garlic powder – 1 teaspoon

Recipe

  1. Toss your chicken wings with your seasoned salt.
  2. Pour water into your Instant Pot, add the steamer basket.
  3. Add in your tossed wings.
  4. Close the Instant Pot’s lid, seal the vent knob.
  5. Cook on high pressure for 10 minutes. You can also use an air fryer lid for an Instant Pot if you prefer.
  6. Let pressure release naturally for five minutes, then do a quick pressure release.
  7. Take out your wings, placing them in a large bowl.
  8. In another bowl, mix your hot sauce, garlic powder, and honey.
  9. Dip each wing in your sauce, thoroughly coating them.

3. Instant Pot Mac and Cheese

Ingredients

  • Elbow pasta, uncooked – 1 pound
  • Water – 4 cups
  • Shredded cheese – 2 ½ cups
  • Butter, sliced – 3 tablespoons
  • Salt – 1 teaspoon
  • Whole milk – ½ cup

Recipe

  1. In your Instant Pot, add your water, pasta, and salt.
  2. Cook on high pressure for four minutes.
  3. When the timer sounds, do a quick pressure release.
  4. Open the lid, stir in your butter slices and shredded cheese.
  5. Pour in a few tablespoons of milk at a time, mixing to the consistency you prefer.

4. Crispy Instant Pot Chicken

For an excellent main dish that your guests will love, check out this recipe for crispy Instant Pot chicken. In about 30 minutes, you’ll have chicken that’s crispy on the outside and juicy on the inside.

Ingredients

  • Chicken thighs – 6
  • Panko breadcrumbs – 1 ½ cups
  • Eggs, beaten – 3
  • Olive oil – 2 tablespoons
  • Unsalted butter – 2 tablespoons
  • Cold water – 1 cup
  • Flour – 1 cup
  • Cornstarch mixed with water – 2 ½ tablespoons
  • Soy sauce – 1 tablespoon
  • Rosemary – 1 pinch
  • Salt and pepper, to taste

Recipe

  1. Add the water and onions into your Instant Pot.
  2. Set your steaming tray into your Instant Pot.
  3. Add your chicken thighs in an even layer.
  4. Close your Instant Pot’s lid, cooking on high pressure for eight minutes.
  5. After the timer sounds, manually release the pressure.
  6. Remove the chicken, adding salt and pepper to it.
  7. In this order, coat your chicken with flour, beaten eggs, and breadcrumbs.
  8. Preheat your oven to 400 degrees Fahrenheit, cooking the wings for 5-10 minutes.

5. Instant Pot Meatballs and Sauce

Ingredients

  • Ground beef – 1 pound
  • Italian bread crumbs – 3 tbsp
  • Pasta sauce – 3 cups
  • Egg, beaten – 1

Recipe

  1. In a large bowl, mix all ingredients except your pasta sauce.
  2. Form the beef into 1 ½ inch balls.
  3. Pour your pasta sauce into the Instant Pot, add in your meatballs.
  4. Close your Instant Pot’s lid, seal the valve, and cook on high pressure for eight minutes.
  5. After the timer sounds, do a quick pressure release.

You don’t need to get out the grill to enjoy tangy, fall-off-the-bone ribs. Instead, follow this recipe to make BBQ ribs in your Instant Pot.

Ingredients

  • Ribs – 1 rack
  • BBQ sauce – ¼ cup
  • Water – 1 cup
  • Salt and pepper, to taste

Recipe

  1. Season your ribs with salt and pepper or a dry rub.
  2. Add your water and trivet into your Instant Pot.
  3. Place your ribs inside the Instant Pot.
  4. Close the Instant Pot’s lid, cook on high pressure for 20 minutes.
  5. After the timer sounds, do a natural pressure release.
  6. Brush the ribs with the remaining BBQ sauce.
